Summertime Cheesy Black Bean & Corn Dip Recipe

Summer is a great time to gather with family and friends, and who wants to spend a lot of time in the kitchen? Not ME! I’d like to share this great Cheesy Black Bean & Corn Dip recipe that I made last weekend. I also have a Creamy Fall-Winter version of it that I’ll share when the hot summer days are gone.  Want to make a fat-free version? Leave the cheese out, or use fat-free cheese!

Cheesy Black Bean & Corn Dip

Yield: 8-10 servings

Prep Time: 10 minutes

Cook Time: None!

Ingredients:

2 {14-16 ounce} cans of Corn, drained
1 {14-16 ounce} can Black Beans, drained and rinsed
1 Red Bell Pepper, chopped
3 Green Onions (or scallions), chopped
12 ounces Colby Jack, grated
3 tbsp Lime juice (add more to taste)
1/4 Cup Cilantro, chopped
Salt to taste
Corn or Tortilla Chips for dipping!

If you like it spicy, add 1 {4 ounce} can of green chilis or jalapenos, chopped

Directions:

Combine all of the ingredients in a bowl. Stir until combined and season with salt to taste. Add more lime juice to taste.

Put the dip in the refrigerator for an hour for all of the tastes to combine, then serve with chips and enjoy!
